On September 11th, CCAH joined thousands of other volunteers to help AARP Foundation pack one million nutritious meals for low-income seniors in the DC metro area to wrap up AARP Foundation’s Summer of Service to Seniors℠.
We’re at the peak of summer, which means it’s peak picnic time. At CCAH, we not only love developing high performing multichannel fundraising strategies, we also love prepping for an afternoon in the park. As we’re planning for upcoming feasts, we wanted to share some of our favorite summer treats. Happy picnicking!
Roshani K’s Spicy Harvest Noodles
1 lb of soba noodles or other thin noodles
1 clove garlic, minced
1 serrano pepper, diced
3 tbsp sesame oil (divided)
1 medium summer squash, medium carrot, and small thai eggplant, sliced (substitute with other farmers’ market finds)
2 tbsp. tamari or soy sauce (add more as needed)
1 pinch brown sugar
5 leaves purple Thai basil (if available)
1 tsp sesame seeds for garnish
